Healthy Apple Almond Muffins

The perfect gluten free, dairy free, low-inflammation and paleo fall muffins! If you are looking for a little extra sweetness you can add Trader Joe's Cinnamon Bun Spread or drizzle with your favorite carmel sauce.

Ingredients
  

  • 2 cups almond flour
  • 2 large eggs
  • 1/4 cup coconut oil melted
  • 1/4 cup honey
  • 1 tbsp pure vanilla extract
  • 1/2 tsp almond extract
  • 1 tsp apple cider vinegar
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1 cup honey crisp apples chopped

Instructions
 

  • Preheat oven to 350° and line muffin tin
  • In medium mixing bowl, whisk together all ingredients (besides apples) and combine
  • Using a spatula gentley fold in apples
  • Scoop batter into prepared muffin tin
  • Bake for 15 minutes, then rotate pan and bake for another 15 minutes
  • Remove muffins from oven and let cool
  • Microwave Cinnamon Bun Spread for 20 seconds and drizzle over muffins
