Avocado Tuna on Cauliflower Thin

Cauliflower thins are a perfect bread substitute with a fraction of the carbs (only 3 carbs) yet still SO delicious and cheesy!⁣ Topped with tuna, avocado and EBTB seasoning makes for a delicious lunch!

Ingredients
  

  • 1 can solid white albacore tuna
  • 2 tbsp mayo
  • dash salt and pepper add extra pepper if prefered
  • 1 tbsp sweet and hot jalapeño peppers diced up (there specific peppers are from Trader Joe's)
  • 1 toasted cauliflower thin
  • 1/2 cup spinach
  • 1/2 avocado
  • 1 tbsp Everything But The Bagel Seasoning

Instructions
 

  • Toast cauliflower thins (I make my sandwhich open faced)
  • Drain tuna and add to small bowl
  • Mix tuna, mayo, salt, pepper, and jalapeño peppers together
  • Top cauliflower thins with a bed of spinach and then add tuna mixture
  • Slice avocado and add ontop of tuna mixture
  • Add EBTB seasoning to sandwhich
