Avocado Tuna on Cauliflower Thin
Cauliflower thins are a perfect bread substitute with a fraction of the carbs (only 3 carbs) yet still SO delicious and cheesy! Topped with tuna, avocado and EBTB seasoning makes for a delicious lunch!

Ingredients
- 1 can solid white albacore tuna
- 2 tbsp mayo
- dash salt and pepper add extra pepper if prefered
- 1 tbsp sweet and hot jalapeño peppers diced up (there specific peppers are from Trader Joe's)
- 1 toasted cauliflower thin
- 1/2 cup spinach
- 1/2 avocado
- 1 tbsp Everything But The Bagel Seasoning
Instructions
- Toast cauliflower thins (I make my sandwhich open faced)
- Drain tuna and add to small bowl
- Mix tuna, mayo, salt, pepper, and jalapeño peppers together
- Top cauliflower thins with a bed of spinach and then add tuna mixture
- Slice avocado and add ontop of tuna mixture
- Add EBTB seasoning to sandwhich
