Banana Bread Donuts

These baked chocolate chip banana bread donuts are a must when you have overly ripe bananas around! I was inspired by my overly ripe bananas to make something more exciting than just a basic banana bread. I wanted to change up the recipe as well as the apperance. Let's just say... these exceeded my expectations!

Servings 12 donuts

  • 1 cup mashed bananas about 2 or 3 large ripe bananas
  • 3 eggs
  • 1/2 cup almond butter
  • 2 tsp vanilla extract
  • 2 cup almond flour
  • 1/2 cup coconut flour
  • 1/4 cup coconut sugar
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1 cup dark chocolate chips

  • 1/4 cup cookie butter melted

  • Prehead oven to 350°F. Spray each donut cavity with nonstick oil
  • In a large mixing bowl, add mashed bananas
  • Next add eggs to the bowl and whisk until combine
  • Add almond butter and vanilla extract to the mix and whisk
  • Next add almond flour, coconut flour, coconut sugar, baking soda and cinnamon. Mix until well combined then fold in chocolate chips
  • Divide batter evenly into each donut cavity. You will have to do this in 2 batches if you are working with a 6 cavity donut tray.
  • After each donut cavity is filled, placce in over for 15-17 minutes or until a toothpick comes out clean
  • Let donuts cool. *Optional - Once cooled remove from donut tray and transfer to parchment paper and drizzle your topping of choice. (I used Trader Joe's Cookie Butter)
