Chicken Meatball Stir Fry
If you’re in need of a quick, easy, and veggie packed dinner - this healthy stir fry can be made and on the table in under 20 minutes! All ingredients were purchased from Costco and Trader Joe's but feel free to substitute with any ingredients you have on hand!

Ingredients
- 9 Teriyaki & Pineapple Chicken Meatballs (from Costco) comes in bulk so I took out what I needed and froze the rest
- 1 pack frozen Gochujang Vegetable Stir Fry w Zucchini Spirals from Trader Joe's
- 5 cups fresh zucchini spirals or 1 pack
- 2 cups fresh edamame or 1 pack
- 2 tbsp olive oil EVOO
- 2 tbsp coconut aminos or soy sauce
- 1 tbsp sriracha sauce
- 3 tbsp General Tso’s sauce or teriyaki - I didn't have any on hand
- 1/2 cup green onion
Instructions
- Heat large pan on medium and add EVOO
- Add frozen stir fry and cook on medium/high heat for about 5 minutes (the Gochujang seasoning will start to cook in with the veggies)
- Add in fresh zucchini spirals, edamame, coconut aminos, and sriracha. Cover pan and let simmer for another 5 minutes or until zucchini spirals become translucent
- While veggies are cooking air fry the chicken meatballs on 400° for 9 minutes (or bake on 350° for 12-15 minutes)
- Remove lid from stir fry and stir
- Divide stir fry veggies into each bowl and add chicken meatballs on top. Drizzle with General Tso’s or teriyaki sauce and top with green onion.
