Chickpea Blondies

The most perfect snack or after dinner sweet treat that is nutritious and not full of sugar with chickpeas being the main ingredient (you would never know)! These Blondies are dairy free, gluten free, and high in fiber! I added vegan dark chocolate chips for some extra flavor. For all ingredients used in this recipe click here.

Ingredients
  

  • 1 can chickpeas 16 oz.
  • 1/2 cup almond butter or peanut butter ⁣
  • 1/3 cup pure maple syrup or honey 
  • 2 tsp pure vanilla extract
  • 1/2 tsp sea salt
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/3 cup vegan dark chocolate chips

Instructions
 

  • Preheat oven to 350. Coat an 8 in. square pan w coconut spray 
  • In a blender or food processor combine all ingredients (besides the chocolate chips). Process until completely smooth. Transfer batter to prepared pan and use a spatula to evenly spread. Scatter chocolate chips on top.⁣
  • Bake for 20-25 minutes, or until a tester inserted into the center comes out clean. Remove pan from oven and set on wire rack. Let blondies cool for 20 minutes, the sprinkle w a pinch of sea salt and cut! ⁣
  • ENJOY! Store in an airtight container for up to 1 week.⁣
