Pumpkin Oat Muffins

Ingredients
  

  • 1 cup organic pumpkin puree
  • 2 eggs
  • 2 tsp vanilla extract
  • 4 tbsp almond butter
  • 1/4 cup almond milk
  • 1/3 cup maple syrup
  • 2 1/4 cup rolled oats
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 cup chocolate chips I used Trader Joe's sea salt caramel baking chips

Instructions
 

  • Preheat oven for 350 degrees
  • Combine all wet ingredients in a bowl
  • Whisk together and transfer for blender
  • Add dry ingredients (besides choc chips) to blender and blend on high for 30 seconds
  • Transfer batter back to bowl and fold in chocolate chips
  • Scoop batter into lined muffin tins and bake for 22-24 minutes
  • Let cool and enjoy!
