Pumpkin Spice Muffins
Add three simple ingredients together to get these delicious and gluten free pumpkin muffins! These are a perfect breakfast or sweet treat muffin for the fall.

Ingredients
- 1 box Trader Joe's Gluten Free Pumpkin Bread & Muffin Baking Mix
- 1 cup water
- 1/2 cup olive oil
- 2 eggs
- 1/2 cup dark chocolate chips
Instructions
- Preheat oven to 350°
- Combine box mix with all other ingredients and mix together well
- Fold in dark chocolate chips
- Fill each muffin liner/tin 3/4 full
- Bake for 24-26 minutes
- Remove from oven and let cool
- Keep in an air tight container (can be refrigerated) up to 1 week
