Pumpkin Spice Muffins

Add three simple ingredients together to get these delicious and gluten free pumpkin muffins! These are a perfect breakfast or sweet treat muffin for the fall.

Ingredients
  

  • 1 box Trader Joe's Gluten Free Pumpkin Bread & Muffin Baking Mix
  • 1 cup water
  • 1/2 cup olive oil
  • 2 eggs
  • 1/2 cup dark chocolate chips

Instructions
 

  • Preheat oven to 350°
  • Combine box mix with all other ingredients and mix together well
  • Fold in dark chocolate chips
  • Fill each muffin liner/tin 3/4 full
  • Bake for 24-26 minutes
  • Remove from oven and let cool
  • Keep in an air tight container (can be refrigerated) up to 1 week
