Valentine's Day Donuts
In honor of it being February it’s time to spread some love and bake some delicious donuts for your lovers! These donuts are baked (not deep fried) and made with all clean ingredients and topped with a delicious cream cheese icing + some festive sprinkles. Also check out these awesome silicone donut trays that will make your life so much easier. After baking, you simply pop your donut out and it keeps it's shape.

Ingredients
Donut Ingredients
- 1 ½ cup almond flour
- 3/4 tsp baking powder
- 3/4 tsp ground ginger
- 1/4 tsp ground cinnamon
- 1/4 cup coconut sugar
- 1/4 tsp salt
- 1 tbsp coconut oil melted
- 1 large egg room temp
- 1 tsp vanilla extract
- 1 tbsp maple syrup
- 3 tbsp almond milk
Icing
- 4 oz fat free cream cheese
- 1 tsp vanilla extract
- 1 tbsp coconut oil melted
- food coloring (I used neon pink & red)
Instructions
- Preheat oven to 350° and grease donut try (I highly suggest these awesome silicone donut trays from Amazon). Combine almond flour, baking powder, ginger, cinnamon, coconut sugar and salt into a medium size bowl.
- Combine melted coconut oil, egg, vanilla extract, maple syrup and allmond milk into a seperate bowl and whisk together well.
- Add wet ingredients to dry. Mix until batter is smooth and there are no almond flour clumps. (If it's thin and liquidy - that's okay)
- Take a spoon and distribute batter evenly into each of the 6 muffin cavities. Place in oven for 18-20 minutes or until a toothpick comes out clean.
- While donuts bake - soften cream chesse for 30 seconds in microwave then add 1 tsp vanilla extract. Melt coconut oil and add to cream cheese and vanilla mixture. Mix well until there are no lumps. (You can use a hand mixer but not necessary)
- When donuts are done baking let cool. Once cool pop them out of donut tray and let cool more on cooling rack. Once completely cool - add icing.
- For white icing - spread cream cheese mixture directly onto donutFor pink icing - add 2-3 drops of neon pink food coloring to cream cheese mixtureFor red icing - add 3-4 drops of red food coloring to pink cream cheese mixture
- Once donuts have been iced add sprinkles of your choice and enjoy! Store in an air-tight container for up to 5 days or store in refrigerator.
